Sugar Cookies in a Flash!
The Preschooler’s 1/2 birthday fell on square day and so we needed a square sweet treat for her to take on her special day. We decided to make Sugar Cookie Bars, from A Little Bit Crunchy And A Little Bit Rock’n Roll, found via Pinterest.
Beautiful, square sugar cookies with bright bubble gum pink vanilla frosting and big square sugar crystal sprinkles — a 3 1/2 year old’s dream treat. They were a HUGE hit! And I’ve made them a couple of time since. This is definitely my go-to recipe for quick sugar cookies.
One side note to this recipe, getting the center of the sheet pan to bake through without over baking the rest of the cookie, is a challenge. So be careful. As you can kind of tell from the picture above, I took these out too early and ended up with the center of the cookie a bit raw. Of course I didn’t find that out until I was cutting them to plate … just my luck! So give them a few extra minutes in the oven to insure the cookie is baked through.
